Prime Rib Roast

  1. Start by taking your prime rib roast out of the refrigerator about 1–2 hours before cooking. Letting it come to room temperature ensures even cooking throughout the roast.
  2. Pat the roast dry with paper towels to remove any excess moisture — this helps create a beautifully browned crust in the oven.
  3. Using a paring knife, make small slits all over the surface of the roast if you’d like to add garlic cloves. Insert thin slices of garlic into each slit for added depth of flavor.
  4. Drizzle the roast with olive oil and rub it evenly over all sides. Generously season with salt and freshly ground black pepper, making sure every surface is coated. This simple seasoning enhances the natural flavor of the beef and forms a savory crust while roasting.

Step 2: Sear at High Heat

  1. Preheat your oven to 500°F (260°C). Place the roast bone-side down on a wire rack set inside a roasting pan. The rack allows hot air to circulate evenly, ensuring a crisp crust and tender interior.
