5-Minute Breakfast Bread Cups

  1. Preheat the oven: Set your oven to 375°F (190°C) and lightly grease a muffin tin or baking dish.
  2. Prepare the bread cups: Flatten each slice of bread with a rolling pin. Press them gently into the muffin tin cavities to form small cups. The bread will hold the fillings while baking.
  3. Add cheese and bacon: Place a slice of cheese into each bread cup. Cut the bacon slices in half and line the edges of the bread cups with them. Partially cook the bacon beforehand if you prefer it crispier.
  4. Add the eggs: Crack one egg into each prepared bread cup. Season lightly with salt and black pepper.
  5. Bake: Place in the oven and bake for 10–15 minutes, depending on how soft or firm you prefer the yolk. For runny yolks, check at 10 minutes; for fully cooked eggs, bake a little longer.
  6. Garnish and serve: Remove from the oven, let cool slightly, and sprinkle with chopped parsley and green onion. Serve warm — they’re crispy on the outside, gooey in the middle, and packed with flavor!
