Ingredients
- 2 packages beef cubes (stew beef or cubed chuck)
- 4 large carrots, chopped
- 1 lb onion, chopped
- 4 celery ribs, chopped
- 3 garlic cloves, chopped
- 1 lb green pepper, chopped
- 3–4 large potatoes, cubed
- 2½ tablespoons vegetable oil
- 3 cups beef broth
- 2 large (2 lb) cans diced tomatoes, undrained
- 3 cups V8 juice (plus more if soup thickens)
- 2 cups chopped cabbage
- 2 cans each of the following: green beans, peas, corn, lima beans, kidney beans, garbanzo beans (or any additional vegetables you enjoy)
- 2 teaspoons beef bouillon granules
- 4 cups beef broth (saved from a roast or store-bought)
- 1½ teaspoons dried parsley flakes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme
- ½ teaspoon dried basil
- 2 bay leaves
