Prep apples & dry mix: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, salt, and nutmeg.
Combine wet ingredients: In another bowl, beat eggs, then whisk in milk, melted butter, and vanilla until smooth.
Mix batter: Pour the wet ingredients into the dry ingredients. Stir until just combined (do not overmix). Gently fold in the diced apples.
Shape & bake: Drop ¼-cup scoops of batter onto the prepared baking sheet, leaving about 2 inches between each fritter. Bake for 18–22 minutes, until golden and a toothpick inserted in the center comes out clean.
Cool: Let fritters cool on the pan for 5 minutes, then transfer to a wire rack.
Glaze: In a small bowl, whisk powdered sugar, 2 tablespoons milk, vanilla, and cinnamon (if using) until smooth. If too thick, add more milk, 1 teaspoon at a time. Drizzle over warm fritters.
Serve: Enjoy immediately! The glaze sets in about 10 minutes, but they’re absolutely heavenly warm from the oven.
