2. Prepare the Egg Mixture:
In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until well blended and slightly frothy. This step ensures a uniform, fluffy texture once baked. For extra flavor, you can add a pinch of garlic powder or onion powder here.
3. Add the Fillings:
Divide the crumbled bacon, diced bell peppers, chopped spinach (or kale), and half of the shredded cheese evenly among the muffin cups. Pour the egg mixture carefully over the fillings, filling each cup about three-quarters full. Sprinkle the remaining cheese on top for a golden, cheesy crust as the muffins bake.
