Instructions

  1. Mix It Up: In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, eggs, chili powder, cumin, paprika, salt, and pepper. Mix until well combined but avoid overmixing to keep the meatloaf tender.
  2. Add the Cheese: Stir half of the cheddar cheese into the meat mixture. Shape the mixture into a loaf and place it in a lightly greased baking dish or lined loaf pan.
  3. Bake: Cover the dish with foil and bake at 375°F (190°C) for about 40 minutes.
  4. Add Glaze & More Cheese: In a small bowl, whisk together ketchup, hot sauce, and brown sugar. Remove the foil from the meatloaf, spread the glaze evenly over the top, and sprinkle with the remaining cheddar cheese.
  5. Finish Baking: Return to the oven and bake uncovered for another 10–15 minutes, or until the cheese is melted and bubbly and the meatloaf is fully cooked (internal temperature should reach 160°F or 71°C).
  6. Rest & Serve: Let the meatloaf rest for 5–10 minutes before slicing. Serve with creamy mashed potatoes, rice, or a side of pickles for a tangy crunch!
