1. Make the Cheesecake Filling:
In a small bowl, beat together the softened cream cheese, sugar, and vanilla until smooth and creamy. Drop teaspoon-sized portions of the filling onto a parchment-lined baking sheet. Freeze for at least 30โ40 minutes, or until firm. This step makes it easier to stuff the cookies later.
2. Prepare the Cookie Dough:
In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined and smooth. Add the egg, egg yolk, and vanilla extract, and whisk until the mixture is glossy and thick.
3. Add the Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the chocolate chips evenly throughout the dough.
