Step 1: Cook the Ground Beef
- In a large skillet over medium-high heat, cook the ground beef and diced onion together until the meat is browned and fully cooked, about 6–8 minutes.
- Season with salt, pepper, and any preferred seasonings, such as garlic powder or paprika, to enhance flavor.
- Once cooked, drain any excess grease from the skillet to prevent the dish from becoming oily.
Step 2: Mix the Creamy Filling
- Add the can of cream of potato soup directly to the cooked beef mixture and stir until evenly combined. This creates a rich, creamy filling that ties the casserole together.
Step 3: Assemble the Base Layer
- Preheat your oven to 350°F (175°C).
- In a 13×9-inch baking dish, spread the uncooked scalloped potatoes evenly along the bottom. These will absorb the sauce as they bake, becoming tender and flavorful.
- In a small bowl, prepare the sauce packet from the scalloped potatoes box according to the package instructions. Stir until smooth.
