Cheesy Taco Potatoes

Instructions

1. Bake the Potatoes:

Preheat your oven to 400°F (200°C). Scrub the potatoes clean, pat dry, and pierce them several times with a fork. Rub lightly with oil and sprinkle with salt. Place directly on the oven rack or on a baking sheet and bake for 45–60 minutes, or until tender when pierced with a fork. (You can also microwave the potatoes for a quicker option — about 10–12 minutes, flipping halfway.)

2. Cook the Beef:

While the potatoes bake, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain any excess grease, then stir in the taco seasoning and water. Simmer for 3–5 minutes until thickened and flavorful.

3. Assemble the Cheesy Taco Potatoes:

Once the potatoes are cooked, carefully slice each one open lengthwise and fluff the inside with a fork. Spoon the taco-seasoned beef generously into each potato, then top with a handful of shredded cheese. Place the loaded potatoes on a baking sheet.
