Instructions
1. Make the Crust:
In a mixing bowl, combine the crushed graham crackers (or vanilla wafers), toasted pecans, melted butter, and granulated sugar. Stir until evenly moistened. Press the mixture firmly into the bottom of a 9×9-inch baking dish or pie pan to form a crust. Chill in the refrigerator for at least 30 minutes to set.
2. Prepare the Cheesecake Layer:
In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fold in the whipped topping until light and fluffy. Spread this cheesecake mixture evenly over the chilled crust.
3. Add the Cherry Topping:
Spread the cherry pie filling evenly over the cheesecake layer. For extra flair, sprinkle chopped pecans over the top for added crunch and a beautiful presentation.
