3️⃣ Prepare the Cream Filling
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Set aside in the refrigerator until ready to assemble.
4️⃣ Assemble the Crepe Roll
- Lay cooled crepes slightly overlapping on a piece of parchment paper to form a large rectangle.
- Spread an even layer of whipped cream down the center.
- Add halved strawberries over the whipped cream.
- Using the parchment for support, roll the crepes into a tight log shape, pressing gently as you go.
- Wrap the roll in parchment and chill for at least 30 minutes to firm up.
