Fluffy No-Bake Cake

Fluffy No-Bake Cake is the perfect dessert for anyone who loves sweet treats with a touch of elegance and simplicity. Layers of crisp tea biscuits, creamy vanilla pudding, and light lemon mousse create a delightful harmony of textures and flavors—all without turning on the oven!

Ingredients

For a 9–10 inch round pan or 9×9 inch square dish:

  • About 230 g (8 oz) tea biscuits
  • A handful of toasted almond flakes (optional)

For the quick vanilla pudding cream:

  • 2 packages vanilla pudding mix (about 40 g each, unsweetened)
  • 750 ml (3 cups) milk
  • 100 g (7 tbsp) butter
  • 3–4 tbsp sugar (to taste)

Additionally:

  • 2 packages lemon gelatin (70 g each)

For the lemon mousse:

  • 400 ml (1¾ cups) heavy cream (30–36%)
  • 1–2 tbsp powdered sugar
  • 1 package lemon gelatin (70 g)
  • 200 ml (¾ cup) water
