2. Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add sour cream, sugar, eggs, vanilla extract, and cinnamon. Mix until everything is fully combined and the batter is velvety. Avoid overmixing to prevent cracks during baking.
3. Pour and Swirl:
Pour the cheesecake filling evenly over the pre-baked cinnamon roll crust. In a small bowl, whisk together the honey, melted butter, brown sugar, and cinnamon for the glaze. Drizzle half of the honey glaze over the cheesecake filling and use a butter knife to gently swirl it through the batter for a marbled effect.
