- Preheat oven to 350°F (175°C).
- In a large bowl, combine cake mix, eggs, oil, and mandarin oranges (with juice).
- Beat with an electric mixer until smooth. The oranges will break apart, adding bursts of flavor throughout.
Step 2: Bake the Cake
- Grease and flour two 9-inch round pans (or use a 9×13-inch pan for a sheet cake).
- Divide batter evenly between pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before frosting.
Step 3: Make the Frosting
- In a medium bowl, mix whipped topping, vanilla pudding mix, and crushed pineapple (with juice) until smooth.
- Chill frosting for at least 15 minutes to firm slightly before spreading.
Step 4: Assemble the Cake
- Place one cake layer on a serving plate and spread a generous amount of frosting on top.
- Add the second layer and frost the top and sides. For a sheet cake, spread frosting evenly across the surface.
