Step 1: Cream the Butter and Sugar
- In a large mixing bowl, add the butter and sugar. Beat them together using an electric mixer or whisk until the mixture is light and fluffy — this step incorporates air into the batter, helping the cake rise beautifully.
Step 2: Add the Eggs
- In a separate bowl, lightly beat the eggs. Gradually add them to the butter-sugar mixture, beating well after each addition. The batter should look smooth and creamy. If it begins to curdle, mix in a tablespoon of flour to bring it back together.
Step 3: Add the Dry Ingredients
- Gently sift the self-raising flour into the bowl. Using a low-speed setting on your mixer or a spatula, fold the flour in until just combined. Be careful not to overmix — this keeps your sponge light and airy.
Step 4: Add Flavor and Milk
- Stir in the vanilla essence and milk. Mix until the batter is smooth, with no visible lumps of flour. The consistency should be thick but pourable.
