3. Make the Creamy Chipotle Sauce 🍶
- In the same skillet, melt butter over medium heat.
- Sauté minced garlic and chopped shallot for 1–2 minutes until fragrant and translucent.
- Add the chopped chipotle peppers in adobo sauce and cook for about 30 seconds to release their smoky flavor.
- Pour in the heavy cream, then stir in Parmesan and lime juice. Mix well until smooth and creamy.
- Season with salt and pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water (1 tablespoon at a time) until desired consistency is reached.
4. Combine Pasta & Shrimp 🥢
- Add the cooked pasta to the skillet and toss until fully coated in the sauce.
- Gently fold in the cooked shrimp, making sure everything is well mixed and heated through.
- Garnish with freshly chopped parsley and an extra sprinkle of Parmesan, if desired.
