3. Make the Creamy Chipotle Sauce 🍶

  1. In the same skillet, melt butter over medium heat.
  2. Sauté minced garlic and chopped shallot for 1–2 minutes until fragrant and translucent.
  3. Add the chopped chipotle peppers in adobo sauce and cook for about 30 seconds to release their smoky flavor.
  4. Pour in the heavy cream, then stir in Parmesan and lime juice. Mix well until smooth and creamy.
  5. Season with salt and pepper to taste. If the sauce is too thick, add a splash of the reserved pasta water (1 tablespoon at a time) until desired consistency is reached.

4. Combine Pasta & Shrimp 🥢

  1. Add the cooked pasta to the skillet and toss until fully coated in the sauce.
  2. Gently fold in the cooked shrimp, making sure everything is well mixed and heated through.
  3. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan, if desired.
