Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook until browned on both sides. Remove from skillet and set aside.
Cook the Chicken: In the same skillet, add diced chicken breasts, onion, garlic, Italian seasoning, salt, and pepper. Sauté for 5–7 minutes, until the chicken is cooked through and no longer pink.
Cook the Pasta: While the chicken cooks, prepare the pasta according to package instructions. Drain and set aside.
Make the Sauce: Once the chicken is cooked, return the browned sausage to the skillet. Add chicken broth and heavy cream, stirring well to combine. Bring to a gentle simmer and let the sauce thicken slightly, about 3–5 minutes.
Add the Cheese: Reduce heat to low and stir in the Pepper Jack and Parmesan cheeses until melted and the sauce becomes smooth and creamy.
Combine: Add the cooked pasta to the skillet and toss until evenly coated in the sauce. Adjust seasoning with salt and pepper to taste.
Serve: Garnish with freshly chopped parsley and an extra sprinkle of Parmesan, if desired. Serve hot and enjoy!
