Crepes with Custard–Cheese Filling

Light, tender crepes wrapped around a creamy vanilla custard and twaróg (farmer’s cheese) filling — simple, homey, and delicious.

Ingredients

For the Crepe Batter

  • 2 eggs (separated)
  • 1 cup milk
  • 3 cups water
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 3 tablespoons vegetable oil

For the Filling

  • 250 g (about 9 oz) ground/pressed farmer’s cheese (twaróg) or well-drained ricotta
  • 2 tablespoons sugar (or to taste)
  • 500 ml (2 cups) milk
  • 1 packet vanilla or cream-flavored pudding mix (with sugar)
