Crockpot Cream Cheese Chicken Chili

Directions

1. Load the Crockpot:

Place the chicken breasts at the bottom of your slow cooker. Add the corn, black beans, and diced tomatoes with green chilies on top of the chicken. This layering allows the chicken to cook evenly while soaking up all the rich flavors from the ingredients.

2. Add the Seasonings:

Sprinkle the ranch seasoning mix, cumin, chili powder, and onion powder over the top of the mixture. These spices bring a delicious balance of creamy, zesty, and mildly smoky flavors to the chili.

3. Add Cream Cheese and Broth:

Place the block of cream cheese on top of everything and pour in the chicken broth. The cream cheese will slowly melt as the chili cooks, creating a rich and creamy base without any need for stirring.

4. Cook Until Tender:

Cover the slow cooker and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender and easily shredded. The longer, slower cook helps all the flavors meld together beautifully.
