Decadent Chewy Fruitcake Cookies 🍪✨

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped candied fruit
  • 1 cup chopped nuts (pecans or walnuts)
  • 1 cup raisins
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Directions

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. In a large bowl, cream together the butter, granulated sugar, and brown sugar until the mixture becomes light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract to infuse the dough with a warm, aromatic flavor.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture into the creamed butter and sugar, blending until a smooth dough forms. Gently fold in the candied fruit, chopped nuts, raisins, cinnamon, and nutmeg, distributing them evenly so every bite bursts with texture and festive flavor.

Drop rounded tablespoons of dough onto the prepared baking sheets, leaving a bit of space between each cookie for spreading. Bake for 10–12 minutes, or until the edges turn a delicate golden brown. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
