Garlic Herb Chicken & Veggie Stir-Fry Bowl with Fluffy Rice

👩‍🍳 Directions

1️⃣ Prep the Chicken

  1. Season the chicken cubes with salt, pepper, garlic, and Italian herbs (or thyme and oregano).

2️⃣ Cook the Chicken

  1. Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  2. Add the seasoned chicken to the pan and cook for about 6–7 minutes, or until browned and cooked through. Remove and set aside.

3️⃣ Sauté the Veggies

  1. In the same skillet, add the remaining 1 tablespoon of olive oil.
  2. First, toss in the carrots and cook for 4 minutes until they begin to soften.
  3. Add the onions and sauté until softened and slightly charred, about 3–4 minutes.
  4. Finally, add the broccoli and cook for another 2–3 minutes until bright green and tender-crisp.

4️⃣ Combine & Season

  1. Return the cooked chicken to the skillet with the vegetables.
  2. Add the soy sauce (or coconut aminos) and stir everything together until evenly coated and aromatic.

5️⃣ Serve

  • Serve the chicken and veggie stir-fry over a bed of warm cooked rice.
  • Enjoy immediately while warm and fresh!
