Instructions
1️⃣ Cook the Chicken
- Heat olive oil in a medium skillet or grill pan over medium-high heat.
- Add the cubed chicken and season with salt, pepper, and paprika. Stir to coat evenly with the oil and spices.
- Cook the chicken for about 7–8 minutes, stirring occasionally, until the pieces are golden brown on all sides and cooked through. The chicken should reach an internal temperature of 165°F (74°C) and remain juicy inside. Remove from the pan and set aside.
2️⃣ Cook the Vegetables
- In the same pan, add a small drizzle of olive oil if needed. Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the broccoli florets and cook for 3–4 minutes, stirring occasionally, until they are bright green and just tender. You can also steam the broccoli for a softer texture if preferred.
- Once the broccoli is nearly done, add the halved cherry tomatoes and cook for 2 minutes more, just until the tomatoes begin to soften and release their juices.
