- Marinate the fish: In a small bowl, mix olive oil, lemon juice, minced garlic, salt, pepper, and herbs. Rub this mixture evenly over both sides of the fish fillets. Let them marinate for 15 minutes to allow the flavors to penetrate.
- Grill the fish: Heat a grill pan or skillet over medium-high heat. Lightly oil the surface and place the fish fillets on the grill. Cook for 3–4 minutes per side, or until golden brown and cooked through. The fish should flake easily with a fork.
- Steam the vegetables: In a steamer or pot with a steaming rack, cook the broccoli, cauliflower, carrots, and pumpkin for 5–7 minutes, until tender but still slightly crisp. Avoid overcooking to maintain their bright color and nutrients.
- Assemble the plate: Arrange a bed of lettuce on each plate. Add the cherry tomatoes and steamed vegetables alongside the grilled fish. Garnish with extra fresh herbs for a fragrant, colorful presentation.
