- Preheat the oven: Set your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In another bowl, whisk together the applesauce, honey or maple syrup, egg, vanilla, and yogurt (if using) until smooth.
- Make the batter: Pour the wet ingredients into the dry mixture and stir gently until just combined. Fold in any optional add-ins.
- Bake: Pour the batter into the prepared loaf pan. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
