Instructions
- Mix the liquids: In a large bowl, combine Greek yogurt, eggs, sweetener, and vanilla extract. Mix by hand or with an electric mixer until smooth and well blended.
- Add the cornstarch: Sift the cornstarch into the bowl and stir gently to avoid lumps.
- Prepare the pan: Line an 18–20 cm (7–8 inch) baking pan with lightly greased or damp parchment paper to help it adhere well.
- Pour and smooth: Pour the batter into the pan and smooth the top with a spatula.
- Bake: Bake in a preheated oven at 180°C (350°F) for about 50 minutes, or until the top is lightly golden.
- Cool and serve: Let the cake cool for at least 30 minutes before removing it from the pan. Serve plain or with your favorite toppings.
