I make this every night and haven’t gained a single pound. It’s the only cake I can eat after dinner. It’s only 90 calories!

Instructions

  1. Mix the liquids: In a large bowl, combine Greek yogurt, eggs, sweetener, and vanilla extract. Mix by hand or with an electric mixer until smooth and well blended.
  2. Add the cornstarch: Sift the cornstarch into the bowl and stir gently to avoid lumps.
  3. Prepare the pan: Line an 18–20 cm (7–8 inch) baking pan with lightly greased or damp parchment paper to help it adhere well.
  4. Pour and smooth: Pour the batter into the pan and smooth the top with a spatula.
  5. Bake: Bake in a preheated oven at 180°C (350°F) for about 50 minutes, or until the top is lightly golden.
  6. Cool and serve: Let the cake cool for at least 30 minutes before removing it from the pan. Serve plain or with your favorite toppings.
