Juicy Meat and Zucchini Roll with Mozzarella and Herb Sauce
Step-by-Step Cooking Directions
1. Prepare the Bread Mixture
Tear the white bread into small chunks and place in a bowl. Pour over 100 ml of milk or cream and allow the bread to soak while you prepare the other ingredients.
2. Combine the Meats
In a large mixing bowl, combine the minced chicken and beef. Crack in the egg, then add khmeli-suneli, paprika, lemon pepper, and salt. Add the soaked bread, garlic, chopped parsley, and optional basil leaves. Mix thoroughly using your hands until the mixture is uniform and cohesive.
3. Sauté the Vegetables
In a skillet, heat 2 tablespoons of olive or vegetable oil over medium heat. Sauté the chopped onion until translucent, about 3 minutes. Add the grated carrot and cook another 3–4 minutes until soft and fragrant. Set aside to cool slightly.
4. Prepare the Zucchini
Slice the zucchinis lengthwise into thin, flat strips using a mandoline slicer or vegetable peeler. The slices should be flexible enough to roll but thick enough to maintain structure during baking.
5. Assemble the Meat Roll
Place a large sheet of baking paper on your work surface. Spread the meat mixture evenly over the paper into a rectangular shape about 1.5–2 cm thick. Leave some space at the edges for easier rolling.
6. Layer the Fillings
Spread the sautéed onions and carrots evenly over the meat layer. Arrange the zucchini strips in overlapping rows across the entire surface. Sprinkle the mozzarella over the zucchini.
7. Roll It Up
Using the baking paper to help you, carefully roll the meat and vegetable layers into a tight log. Press gently as you roll to ensure a firm structure. Seal the ends and wrap the roll tightly in foil.
8. Bake the Roll
Place the foil-wrapped roll on a baking tray. Bake in a preheated oven at 200°C (392°F) for 60 minutes.
9. Glaze and Finish
After 60 minutes, remove the foil. Mix 30 ml olive oil with soy sauce and ketchup to make the glaze. Brush this mixture generously over the roll. Return to the oven uncovered for another 5 minutes to achieve a glossy, golden crust.
10. Slice and Serve
Allow the roll to rest for 5 minutes before slicing. Serve warm, optionally with rice, potatoes, or a fresh salad.
