1️⃣ Prep & Preheat
- Preheat your oven to 375°F (190°C).
- Lightly grease a standard loaf pan or line it with parchment paper for easier cleanup.
2️⃣ Mix the Meatloaf
- In a large mixing bowl, combine ground beef, milk, eggs, taco seasoning, chopped onion, green chiles, crushed tortilla chips, minced garlic, 1 cup of the cheese, and ½ cup of the salsa.
- Mix thoroughly until all ingredients are evenly incorporated—using your hands works best!
3️⃣ Bake
- Press the meat mixture into the prepared loaf pan, shaping it evenly.
- Spoon the remaining ½ cup salsa over the top and spread it evenly.
- Bake uncovered for 45 minutes.
4️⃣ Add Cheese & Finish Baking
- Sprinkle the remaining ½ cup of cheese over the top of the meatloaf.
- Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
5️⃣ Rest & Serve
- Let the meatloaf rest for 10 minutes before slicing—this helps the juices settle.
- Garnish with chopped cilantro and serve warm with your favorite sides.
