Mexican Meatloaf with a Spicy Kick

👩‍🍳 Instructions

1️⃣ Prep & Preheat

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a standard loaf pan or line it with parchment paper for easier cleanup.

2️⃣ Mix the Meatloaf

  1. In a large mixing bowl, combine ground beef, milk, eggs, taco seasoning, chopped onion, green chiles, crushed tortilla chips, minced garlic, 1 cup of the cheese, and ½ cup of the salsa.
  2. Mix thoroughly until all ingredients are evenly incorporated—using your hands works best!

3️⃣ Bake

  1. Press the meat mixture into the prepared loaf pan, shaping it evenly.
  2. Spoon the remaining ½ cup salsa over the top and spread it evenly.
  3. Bake uncovered for 45 minutes.

4️⃣ Add Cheese & Finish Baking

  1. Sprinkle the remaining ½ cup of cheese over the top of the meatloaf.
  2. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

5️⃣ Rest & Serve

  1. Let the meatloaf rest for 10 minutes before slicing—this helps the juices settle.
  2. Garnish with chopped cilantro and serve warm with your favorite sides.
