1. Make the Base:
In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined. The mixture should hold together when pressed between your fingers. Set aside β this will add texture and flavor to the cheesecake balls.
2. Prepare the Filling:
In a large bowl, beat together the softened cream cheese, peanut butter, powdered sugar, and vanilla extract using a hand mixer or whisk until smooth and creamy. Stir in the graham cracker mixture until fully incorporated. The mixture should be thick enough to roll into balls β if too soft, chill for 15 minutes.
3. Form the Balls:
Using a small cookie scoop or tablespoon, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Freeze for 15β20 minutes until firm.
