- Prepare the batter: In a bowl, combine the oatmeal, grated apple, water, egg, vanilla extract, and mashed banana. Stir until well mixed. Let it sit for 5–10 minutes so the oats can absorb the liquid and thicken the batter.
- Preheat the pan: Heat a non-stick skillet or frying pan over medium heat and lightly grease with a little olive or coconut oil.
- Cook the pancakes: Pour small portions of batter (about 2 tablespoons each) into the pan. Flatten slightly to form small pancakes. Cook for 2–3 minutes on each side until golden brown and cooked through.
- Serve: Enjoy warm on their own or topped with Greek yogurt, honey, or fresh fruit. These pancakes are naturally sweet from the banana and apple, so no added sugar is needed!
