How to Make It

  1. Mash the banana: In a bowl, mash the banana until almost smooth. A few small lumps are fine.
  2. Add the eggs: Crack the eggs into the same bowl and whisk together with the banana until well blended.
  3. Cook:
    • For pancakes: Heat a non-stick frying pan over medium heat. Lightly grease with oil or butter. Pour small rounds of batter into the pan and fry for 1–2 minutes on each side until golden brown.
    • For scrambled eggs: Pour the mixture into a skillet and cook like scrambled eggs, stirring gently until set.
  4. Add cinnamon: Sprinkle cinnamon while cooking or after serving for extra flavor (optional, but delicious!).
