👩🍳 Instructions
- In a very large mixing bowl, combine the brown sugar, butter, oats, flour, baking soda, and chopped nuts if using.
- Use your hands to mash, knead, and squeeze the mixture until everything is fully incorporated. This process can take several minutes. (Be sure to remove rings or jewelry beforehand!)
- Once the dough is uniform, form into small balls about the size of a medium marble (roughly 1 inch).
- Place balls onto ungreased cookie sheets, spacing them about 2 inches apart—they will spread slightly during baking.
🔥 Flattening and Baking
- Butter the bottom of a flat-bottomed glass.
- Dip the glass into a bowl of cinnamon sugar (optional but tasty!) and gently press each dough ball until it’s about 1/4 inch thick. Repeat for each cookie—re-dip in the sugar as needed, but you only need to butter the glass once.
- Bake in a preheated oven at 350°F (175°C) for 10–12 minutes, or until cookies are lightly golden around the edges but still soft in the center.
- Let cookies cool on the pan for 1–2 minutes before transferring to wire racks to cool completely.
