Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C).

  3. Mix Batter: In a small bowl, whisk together the egg, milk, flour, sugar, baking powder, and salt until combined.
  4. Add to Pan: Pour the batter directly over the melted butter in the baking dish. Do not stir — the separation will help create the cobbler’s crust.
  5. Add Pineapple and Cream Cheese: Arrange drained pineapple chunks evenly in a single layer over the batter. Drop the cream cheese pieces evenly over the top.
  6. Bake: Bake for about 45 minutes, or until the top is golden brown and the edges are bubbling.
  7. Serve: Let cool slightly before serving. Enjoy warm, at room temperature, or chilled.
