For the Steaks:
1 tbsp vegetable oil
1 tbsp butter
3 pork steaks
Salt and black pepper (to taste)
For the Creamy Mushroom Sauce:
1 tbsp butter (extra)
1 small onion or shallot (finely chopped)
2–3 garlic cloves (minced)
200 g (about 7 oz) mushrooms (sliced — button or cremini work well)
200 ml (¾ cup) heavy cream or double cream
½ cup chicken stock or broth
1 tsp Dijon mustard (optional but adds great flavor)
1 tsp dried thyme or a few sprigs of fresh thyme
Salt and black pepper (to taste)
Fresh parsley (for garnish)
