Pull-Apart Cookie Dough Cheesecake Loaf – Gooey, Creamy, and Utterly Addictive

👩‍🍳 How to Make It

Step 1: Prepare the Cheesecake Filling

  1. In a medium bowl, beat together the cream cheese and sugar until smooth and creamy.
  2. Add the egg yolk and vanilla extract, mixing until fully incorporated and silky. Set aside while you prepare the cookie dough.

Step 2: Make the Cookie Dough

  1. In a separate bowl, whisk together the flour, baking soda, and salt.
  2. In a large mixing bowl, cream the butter with the brown sugar and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Add the egg and vanilla extract, mixing well to combine.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips gently with a spatula.

Step 3: Assemble the Loaf

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper, allowing some overhang for easy removal later.
  2. Divide the cookie dough into several small portions — about the size of a golf ball.
  3. Press a few dough pieces into the bottom of the loaf pan to form a base layer. Add spoonfuls of the cheesecake filling on top, then cover with more cookie dough pieces.
  4. Continue layering until all the dough and cheesecake filling are used up, finishing with a layer of cookie dough on top. Don’t worry about being too precise — the rustic pull-apart texture is part of the charm!
  5. Step 4: Bake the Loaf
