Savory Scramble with Spinach, Mushrooms & Avocado

Directions

1️⃣ Sauté Onions & Mushrooms

  1. Heat ½ teaspoon of olive oil in a medium skillet over medium heat.
  2. Add the sliced onion and mushrooms, stirring occasionally, until softened and golden brown, about 6–7 minutes. The onions should be lightly caramelized, and the mushrooms tender with a slight crisp edge.
  3. Season with salt and pepper to taste, then transfer to a small plate and set aside.

2️⃣ Scramble Eggs with Spinach

  1. In the same skillet, add a touch more oil or butter if needed.
  2. Lightly beat the eggs in a small bowl, then pour them into the skillet over medium-low heat.
  3. Add the spinach immediately and stir gently using a spatula, folding the eggs slowly as they cook. This ensures soft, creamy curds instead of dry, overcooked eggs.
  4. Season lightly with salt and pepper, then remove from the heat while the eggs are still slightly glossy — they’ll finish cooking from residual heat.
