1️⃣ Sauté Onions & Mushrooms
- Heat ½ teaspoon of olive oil in a medium skillet over medium heat.
- Add the sliced onion and mushrooms, stirring occasionally, until softened and golden brown, about 6–7 minutes. The onions should be lightly caramelized, and the mushrooms tender with a slight crisp edge.
- Season with salt and pepper to taste, then transfer to a small plate and set aside.
2️⃣ Scramble Eggs with Spinach
- In the same skillet, add a touch more oil or butter if needed.
- Lightly beat the eggs in a small bowl, then pour them into the skillet over medium-low heat.
- Add the spinach immediately and stir gently using a spatula, folding the eggs slowly as they cook. This ensures soft, creamy curds instead of dry, overcooked eggs.
- Season lightly with salt and pepper, then remove from the heat while the eggs are still slightly glossy — they’ll finish cooking from residual heat.
