Instructions

Step 1: Prepare the Meatloaf Mixture

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, BBQ sauce, and bourbon. Mix gently until the ingredients start to come together.
  3. Add the smoked paprika, garlic powder, salt, and black pepper. Stir or use your hands to combine until evenly distributed. Be careful not to overmix, as this can make the meatloaf dense.

Step 2: Shape and Wrap

  1. Divide the meat mixture into 8 equal portions. Shape each portion into a round “cupcake” shape — slightly taller than wide, with a flat top for the mashed potato frosting later.
  2. Wrap each meatloaf cupcake with a slice of bacon. Overlap the ends slightly and secure with a toothpick if needed to prevent the bacon from curling during baking.
  3. Place the prepared meatloaf cupcakes on the parchment-lined baking sheet, leaving space between each to allow the bacon to crisp evenly.

Step 3: Bake the Meatloaf Cupcakes

  1. Place the tray in the preheated oven and bake for 25–30 minutes, or until the bacon is crisp and the internal temperature of the meatloaf reaches 160°F (71°C).
  2. If you like your bacon extra crispy, place the cupcakes under the broiler for 1–2 minutes after baking — just watch closely to prevent burning.
  3. Once cooked, remove from the oven and allow them to cool for about 5 minutes. Carefully remove any toothpicks.

Step 4: Frost with Mashed Potatoes

  1. While the meatloaf is baking, prepare your mashed potatoes — creamy, buttery potatoes work best for piping or spreading. You can use homemade mashed potatoes or leftovers for convenience.
  2. Once the meatloaf cupcakes are slightly cooled, pipe or spoon the mashed potatoes on top, creating a swirl to mimic cupcake frosting. For a professional look, use a piping bag fitted with a large star tip.
