Swamp Soup – A Hearty Southern Classic

Preparation

This couldn’t be easier! Follow these steps for a delicious, comforting bowl of Swamp Soup:

Step 1: Sauté

  1. In a large pot, sauté the chopped onion and sliced sausage together over medium heat until the onions soften and the sausage starts to brown.

Step 2: Add the Greens and Beans

  1. Add all the canned greens and beans to the pot — do not drain, except for the black beans, which should be rinsed to prevent the soup from turning muddy in color.

Step 3: Add Broth and Seasoning

  1. Pour in the chicken broth, add apple cider vinegar, and the optional ham base if using.
  2. Stir everything together until well combined.

Step 4: Simmer

  1. Bring the mixture to a gentle simmer. Let it cook for 1 to 4 hours, stirring occasionally. The longer it simmers, the richer the flavor becomes.

Step 5: Adjust Consistency

  1. If you prefer a thinner soup, add water to reach your desired consistency. For a thick and hearty stew-like texture, skip the extra water.
