Heat the olive oil in a large saucepan over medium heat. Add the sliced onion and chopped garlic and sauté until translucent.
Add the chopped carrots, beetroot and ginger. Cook for a few more minutes, stirring occasionally.
Pour in the vegetable broth and bring to the boil. Reduce heat and simmer vegetables until tender, about 20 to 25 minutes.
Puree the soup with a hand blender until smooth or place in portions in a blender.
