- Preheat and prepare the baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the fritters from sticking and for easy cleanup.
- Mix the dry ingredients: In a large bowl, combine the all-purpose flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk them together until well blended. The spices will add a warm, comforting flavor to the fritters.
- Mix the wet ingredients: In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter until smooth and fully combined.
- Combine wet and dry ingredients: Add the wet ingredients to the dry mixture, stirring gently until just combined. Be careful not to overmix, as this can result in dense fritters. The batter will be thick.
- Fold in the apples: Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter. The apples will add a natural sweetness and moisture to the fritters.
- Shape the fritters: Using a spoon, drop mounds of batter onto the prepared baking sheet, shaping each mound into small rounds. Leave some space between each fritter to allow for spreading as they bake.
- Bake the fritters: Bake for 15–18 minutes, or until the fritters are golden brown on top and a toothpick inserted into the center comes out clean. The fritters should be firm to the touch but soft and fluffy inside.
