Step 1: Prepare the Balsamic Reduction
- In a small saucepan, heat balsamic vinegar (and honey, if using) over medium-low heat.
- Simmer for 8–10 minutes, stirring occasionally, until reduced by half and thickened to a syrup-like consistency.
- Remove from heat and let cool — it will continue to thicken slightly as it cools.
Step 2: Make the Cream Cheese Balls
- In a bowl, mix softened cream cheese with honey, vanilla extract, and lemon zest until smooth and creamy.
- Chill the mixture for about 15 minutes to firm it up slightly.
- Using a small scoop or tablespoon, form small balls (about 1 tbsp each) and roll them evenly in the ground pistachios to coat.
- Place on a tray and refrigerate for another 15 minutes until set.
Step 3: Assemble the Dish
- Divide the diced watermelon evenly among serving plates or a large platter.
- Place one pistachio-crusted cream cheese ball on top of each portion of watermelon.
- Drizzle generously with the balsamic reduction, letting it cascade over the watermelon for a beautiful presentation.
- Sprinkle extra chopped pistachios and fresh mint leaves on top, if desired.
