Remove the meat and, in the same casserole dish, sauté the onions until caramelized. Add the cane sugar and soy sauce for a touch of umami.
Slow cook in the oven:
Return the beef to the casserole, add the caramelized onions and beef broth.
Cover and cook at 150°C for 3 hours, checking occasionally and adding a little stock if necessary.
Fraying and Serving:
When the meat is tender, remove it from the oven and shred it with a fork. Serve with the onions and a splash of drippings for a comforting dish.
