Ingredients
To make this delicious white chicken chili, you’ll need:
- 3 cooked and chopped chicken breasts, or 2 large cans of white chicken (canned works great)
- 2 cans of cream of chicken soup
- 2 cans of navy or cannellini beans (cannellini have a slightly richer flavor)
- 1 (10 oz) can of Rotel tomatoes – mild if you prefer less heat
- 2 cans of shoepeg corn, or 1 large can of white and yellow sweet corn if shoepeg isn’t available
- 16 ounces of Velveeta cheese, cut into chunks
- 2 soup cans of water
