Zucchini Pizza Without Dough or Flour — Ready in 10 Minutes!

1. Grate the Zucchini

Wash, dry, and grate the zucchini on a coarse grater. Place it in a colander with a pinch of salt and let it rest for 5–10 minutes to release water. Then squeeze it firmly with your hands — the drier the zucchini, the crispier the crust will be.

2. Prepare the “Dough”

In a large bowl, mix the drained zucchini, grated cheese, egg, Parmesan, and garlic. Combine everything by hand — you’ll feel when the texture is right: soft but not wet.

3. Shape the Base

Line a rectangular baking dish with parchment paper. Spread the mixture evenly, pressing it down like wet sand to compact it slightly.

4. Bake

Bake in a preheated oven at 200°C (about 400°F) for 25 minutes. You’ll smell the garlic and cheese halfway through — irresistible! After 25 minutes, remove the dish, top with diced mozzarella, and return to the oven for 10 more minutes, until melted and lightly golden.
