Bruschetta with Roasted Garlic and Avocado

Instructions

1️⃣ Roast the Garlic

  1. Preheat your oven to 190°C (375°F). Prepare the garlic by slicing off the top of the bulb to expose the individual cloves inside. Place it on a small sheet of foil.
  2. Drizzle the exposed cloves with olive oil and sprinkle with a pinch of salt. Wrap the foil around the bulb to seal it loosely, allowing steam to circulate.
  3. Roast for 35–40 minutes, or until the cloves are soft, golden, and aromatic. The garlic should become caramelized and spreadable with a rich, mellow sweetness. Let it cool slightly before handling.
  4. Once cooled, gently squeeze the roasted garlic from its skins into a small bowl, mashing it lightly with a fork until it forms a smooth paste.

2️⃣ Prepare the Avocado Spread

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
  2. Add the lemon juice, salt, pepper, and chopped herbs. Mash with a fork or potato masher until combined, leaving a few small chunks for texture.
  3. Taste and adjust seasoning as needed — the lemon juice should brighten the flavor while keeping the avocado from browning.
