Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Take the roll of chocolate chip cookie dough and divide it into 16 equal portions (about 1 tablespoon each).
Flatten each portion slightly into a disk shape using your hands.
Step 3: Assemble the Cookies
Remove the cheesecake filling from the freezer. Place one dollop of the filling in the center of a flattened piece of cookie dough.
Top with another flattened piece of cookie dough, pinching the edges together to completely seal the cheesecake inside.
Roll gently into a smooth ball and place it seam-side down on the prepared baking sheet. Leave about 2 inches of space between cookies, as they will spread slightly while baking.
Step 4: Bake and Cool
Bake the cookies for 12–15 minutes, or until the edges are lightly golden and the centers are just set. Be careful not to overbake — you want them soft and gooey!
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
