1️⃣ Make the Crepe Batter
- In a large bowl, whisk together the flour, cocoa powder, sugar, and salt.
- In another bowl, whisk eggs, milk, melted butter, and vanilla extract until smooth.
- Gradually pour the wet mixture into the dry ingredients, whisking continuously until the batter is silky and lump-free.
- Let the batter rest for 20–30 minutes to allow bubbles to settle and ensure tender crepes.
2️⃣ Cook the Crepes
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter.
- Pour about ¼ cup of batter into the pan, swirling quickly to coat the bottom evenly.
- Cook for 1–2 minutes until the edges lift easily, then flip and cook another 30 seconds.
- Repeat with remaining batter, stacking cooked crepes on a plate to cool completely.
3️⃣ Prepare the Cream Filling
