  1. Prepare the Batter: In a large bowl, combine the grated cabbage, finely chopped onion, flour, salt, and pepper. Mix well to coat the cabbage evenly in the dry ingredients.
  2. Add the Eggs: Pour the lightly beaten eggs into the mixture and stir until everything is well combined. The batter should be thick enough to hold together when spooned — if it’s too dry, add a teaspoon of water at a time until it reaches the right consistency.
  3. Heat the Skillet: Place your cast iron skillet over medium heat. Add enough oil to lightly coat the bottom, along with a spoonful of bacon grease for flavor. Allow the skillet to get hot — you should hear a gentle sizzle when the patties hit the pan.
  4. Form and Fry the Patties: Using a spoon, drop heaping spoonfuls of the cabbage mixture into the hot oil. Flatten each slightly with the back of the spoon to form small patties.
