Epiphany Cake with Pastry Cream (Traditional & Unmissable Recipe)

🌰 For the almond cream

  • 100 g ground almonds

  • 100 g caster sugar

  • 100 g soft butter

  • 2 eggs

  • 1 tbsp flour

  • 1 teaspoon bitter almond extract (optional but recommended)

🍼 For the custard

  • 500 ml whole milk

  • 4 egg yolks

  • 100 g sugar

  • 50 g cornflour

  • 1 vanilla bean (or 1 teaspoon extract)
