- 1 lb carrots, cut into sticks
- 2 tbsp butter
- 2 tbsp brown sugar
- Salt & pepper, to taste
- Parsley, chopped (for garnish)

1️⃣ Cook the Chicken
- Season chicken breasts with salt, pepper, oregano, and thyme.
- Heat olive oil in a large skillet over medium heat.
- Sear chicken for 5–7 minutes on each side until golden and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the pan (this forms a flavorful sauce).
- Return chicken to the pan, spoon sauce over the top, and simmer for 5 minutes to coat.
2️⃣ Make the Mashed Potatoes
- Boil potatoes in salted water for 15–20 minutes until fork-tender.
- Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
