Garlic Herb Chicken with Mashed Potatoes & Glazed Carrots

  • 1 lb carrots, cut into sticks
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • Salt & pepper, to taste
  • Parsley, chopped (for garnish)

Instructions 👩‍🍳

1️⃣ Cook the Chicken

  1. Season chicken breasts with salt, pepper, oregano, and thyme.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear chicken for 5–7 minutes on each side until golden and cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and lemon juice, scraping up any browned bits from the pan (this forms a flavorful sauce).
  6. Return chicken to the pan, spoon sauce over the top, and simmer for 5 minutes to coat.

2️⃣ Make the Mashed Potatoes

  1. Boil potatoes in salted water for 15–20 minutes until fork-tender.
  2. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.

3️⃣ Prepare the Glazed Carrots
