Garlic Herb Roasted Veggies

Instructions

1. Preheat the Oven:

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

2. Prepare the Veggies:

In a large bowl, combine the halved potatoes, carrots, green beans, and bell pepper (if using). Drizzle with olive oil, then add the minced garlic, Italian seasoning, paprika, salt, and pepper. Toss everything well to evenly coat the vegetables in the seasonings.

3. Roast:

Spread the vegetables in a single layer on the prepared baking sheet. For the best crispiness, avoid overcrowding — use two pans if necessary. Roast for 25–30 minutes, flipping halfway through, until the veggies are tender and lightly browned on the edges. The potatoes should be fork-tender and the carrots caramelized.
